MOM'S OLD-FASHIONED PIMENTO CHEESE

1/2 pound sharp cheddar, grated
1/2 pound Cracker Barrel extra sharp cheddar, grated
1/2 cup mayonnaise (I use Duke’s)
3 tablespoons India Relish or my
Pepper Relish
3 tablespoons pickle juice (or more to desired consistency)
4 ounces pimentos, diced
1-2 tablespoons onion, minced (optional, but I like and sometimes add more)
Salt,  a pinch
Black pepper, freshly ground (to taste, but I liberally use it)

Let grated cheeses come to room temperature. Add other ingredients and mix together. I use my hands and squeeze so that the cheese remains with some form. I prefer not to mix in a Cuisinart, I think it becomes too creamy!

Great for sandwiches, dips, a spread for crackers or celery…a topping for a baked potato. For a variation, try chopped dill pickles instead of relish or chopped olives. Always a hit at my house, and I like to take it to a hostess in basket with crackers for a weekend get-away…
