MIMI'S PEPPER RELISH

8 pounds red bell peppers (green peppers can be used)
2 pounds vidalia or sweet onions
1 cup white vinegar
1 cup sugar
Salt to taste
2+ jalapeno peppers, optional

Core peppers and peel onions. Grind peppers and onions and drain. Put in a large saucepan and cover with boiling water. Let stand and cool. Drain all the water and cook in syrup of sugar and vinegar 25-30 minutes. Salt to taste. Seal in sterile jars.

Serve as a condiment for greens such as collards, mustard, kale, cabbage. Delicious in deviled eggs and pimiento cheese. A fun hostess gift that will be most appreciated!
