TRISH'S THREE BEAN BAKE

4 slices bacon, cooked, crumbled (or more)

1 onion (medium) minced, sauteed in bacon grease or olive oil

1 can (15 ounce) pork and beans

1 can (15 ounce) red kidney beans, drained

1 pound frozen lima beans, blanched for 2 minutes

1/2 cup light or dark brown sugar (can substitute honey or agave syrup)

1/3 cup ketchup

2 teaspoons Worcestershire sauce

1/2 pound cheddar cheese, cubed

Pre-heat oven to 350°. In a large bowl mix all ingredients. Pour in a buttered casserole dish and bake uncovered for 30 minutes. Serves 8-10.

How easy it that for a crowd pleaser!? Can be doubled, and certainly substitute your favorite beans.

Note: this recipe card is so stained, worn, and old I could not for the life of me remember who Trish is. That is until I took the dish to a 4th of July party some neighbors were having here who had moved from Charlotte. Comment “This looks like Trish’s recipe”. Well, yeah, I said…who is Trish…and the light bulb came on…it is a well-loved recipe and has been for years. Enjoy!
