POOR MAN'S PATÊ DE FOIE GRAS

1/2 pound liverwurst sausage
3 ounces cream cheese
4 tablespoons mayonnaise (preferably Duke’s)
1/3 cup cream
1 tablespoon melted butter
1 tablespoon Worcestershire sauce
1 tablespoon brandy (or sherry)
1/4 teaspoon sea salt
1/4 teaspoon freshly ground pepper
1/4 teaspoon curry powder
Cayenne powder (dash of)
Nutmeg (dash of)
Pistachios for garnish

Mash and blend liverwurst and cream cheese. Add other ingredients and blend well. Scrape into a decorative bowl and chill, overnight if possible. I think it gets better each day. Sprinkle chopped Pistachios over the top for garnish. Serve with sliced red onions, your favorite crackers, Cornichons, country mustard, grape tomatoes…so simple to prepare and something a bit out of the ordinary.

This recipe was passed down to me by a mentor Sally James who wrote an article “In Good Taste” for the Charlotte Observer. I will be forever grateful for her knowledge…what magazines, cookbooks, cooking equipment to buy…and the exquisite food she prepared that inspired me to “up my game” and experiment with different cuisines.
