BAKED CARAMELIZED GARLIC

1-3 elephant garlic heads
olive oil


Preheat oven to 400°.  Trim off the top to expose individual cloves and root of the garlic bulbs.  Place in a shallow baking dish and with fill with water 1/3-1/2 way up.  Drizzle the tops with olive oil.  Cover the entire dish with tin foil and cook for 1-1 1/2 hours depending on size.  The garlic will be soft to the touch and become mellow in taste. The garlic becomes carmelized so it is more easily digested.Push out the clove with a knife or squeeze with fingers. It spreads like butter.


Serve with warm bread as an appetizer.  Also, the cooked garlic is wonderful on pizza, in soups, pastas, dips, and many other dishes.  So cook more than you think you will eat and store in refrigerator for later!  And remember, the healthy benefits you are ingesting! Click here to watch the video.
