Creamy Grits

2 tbsp. butter
2 c. water
 ½  c. stone or water-ground whole grain grits
1-2 c. milk, cream, half and half, water or stock
Salt to taste

Bring water and butter to a boil in a heavy saucepan. Stir in grits and return to a boil. Reduce heat and cook on low boil for about 10 minutes, stirring occasionally. When most of the water has been absorbed, add ½ cup of milk etc. and simmer for about 10 minutes. Continue to add more as the liquid is absorbed. The total cooking time is about an hour, but it is definitely worth it
